“The humanity element of restaurants. The back of house employees, the hosts, the servers. It keeps people engaged with the the people that are there”

What is a successful tactic or strategy you’ve tried lately?

“Take a look at management in general. There needs to be a certain level of presence, presence of mind, and presence of body.”

Who deserves an Ovation in the restaurant industry?

“First of all, all of the back of house employees. The dishwashers, chefs, etc.. . . .

I really appreciate my boss, Gavin Kaysen. He’s done an amazing job pushing expectations and creating high-level experiences in restaurants.”
