“The food has to be better than your expectations, because you’re looking at a vending machine. The food has to be better, but we have to make sure the tech puts the food in the front right, so people always want to see that food and try it.”

“we not only have to be good, we have to be better than you think we can be. We have to surpass your expectations.”

What successful things have you seen or tried lately?

“You have to have your staples and you have to always be very consistent with what you offer, how you offer them, the whole presentation.”

Who deserves an Ovation in the restaurant industry?

Rick Bayless, “I like Rick Bayless, we did a great collab with him and he’s got a lot of good restaurants here in Chicago. Obviously one top chef master.”
