With over 20 years experience within the restaurant industry, Nick has held many positions has grown a business from the ground up. What is the most important aspect of the guest experience nowadays?

“We try to break it down into 3 categories called PSI and then make sure that we’re paying attention and given detail to those 3 categories.

1. Product: make sure everything is perfect with your product. It’s the way that the the wings look, the amount of sauce, and their cooking time. Same with the pizza of how it’s cut, do they have enough pepperoni, it’s the consistency.

2. Service: service is the way the host treats you, the way that somebody answers the phone, to the way the driver hands it to the customer. Your interactions need to be positive and engaged.

3. Image: image can be everything from window seals are dirty or the uniforms aren’t in place. What do the bathrooms look like, what’s the actual image of the the restaurant? What’s the lighting look like? What’s the mood look like?”

How do you build trust in the industry?

“Everything ties back to the employees and your people, and I think how you treat people how you want to be treated, and I think that that does trickle down. And I think what’s really important. As you recognize your weaknesses. You hire your strengths
